Nicoise Salad

Nicoise Salad

Makes: 4 ServingsĀ  |Ā  Prep: 10 minutesĀ  |Ā  Cook: 10 minutes

**Please choose organic produce and products whenever possible

INGREDIENTS:

  • 1 small bag French green beans
  • Drizzle of olive oil, sea salt, and black pepper
  • 1 cup green or Kalamata olives, pitted
  • 2 Tablespoon capers, drain liquid Ā 
  • 2 Roma tomatoes, sliced Ā 
  • 1 cup Garbanzo or Cannellini beans, drained and rinsed
  • 8 cups mixed greens of choice
  • Roasted or smoked salmon filet

Honey Mustard Vinaigrette:

  • 1 fresh lemon, juiced
  • 1 Tablespoon Dijon mustard
  • Ā½ – 1 Tablespoon honey
  • 1 teaspoon sea salt
  • Ā½ teaspoon black pepper
  • ~ Ā¾ – 1 cup olive oil

DIRECTIONS:

  1. Preheat oven to 400 degrees Fahrenheit.*
  2. Toss green beans with a little olive oil, sea salt, garlic powder and black pepper.
  3. Roast beans for ~10 minutes.
  4. While beans roast, slice/prepare the rest of the ingredients.
  5. Divide salad greens between 4 salad bowls. Divide the following toppings between salads: olives, capers, tomato, garbanzo or canellini beans, and salmon.
  6. Once green beans are done roasting, divide them amongst the salads.
  7. Top with dressing and enjoy!

**Roasting the green beans is optional. You can sautee them in a skillet on the stove, grill them, or leave them raw for a no-cook quick weeknight meal! .

Cashew Butter Blueberry Muffins

Cashew Butter Blueberry Muffins

INGREDIENTS:

  • 1 cup organic cashew butter (3 cups raw cashews ground = 1 cup butter)
  • Ā½ cup unsweetened organic applesauce
  • Ā½ cup unsweetened oat milk
  • Ā¼ cup ground chia seed or flax meal
  • Ā¼ cup pure maple syrup
  • 2 Tbsp. organic Turbinado sugar or coconut sugar
  • 2 large eggs
  • 1 Ā½ tsp. baking powder
  • Ā½ tsp. sea salt
  • 1 cup fresh organic blueberries
  • parchment muffin tin liners

DIRECTIONS:

  1. Preheat oven to 350 degrees Fahrenheit. Line 12 muffin tins with paper liners.
  2. In a food processor, combine all of the ingredients, except the blueberries, until the batter is smooth.
  3. Transfer the batter to a bowl and fold in the blueberries using a spatula.
  4. Fill the muffin tins until the batter is level with the top of the liner.
  5. Bake at 350 for ~30-40minutes (times may vary based on oven) until golden brown on top.
  6. Allow muffins to cool. Enjoy!

*Store muffins in an airtight container in the refrigerator for up to 1 week.

Berry Butter Toast

INGREDIENTS:

  • Ā½ cup fresh seasonal berries ā€“ try blueberries, blackberries, strawberries or raspberries
  • 1 heaping tbps. Nut butter ā€“ try almond, cashew, sun, walnut, peanut, or macadamia
  • 1 piece of gluten-free or artisanal bread of choice

DIRECTIONS:

  1. Toast the bread on your preferred toaster setting
  2. Wash and dry the berries; slice if necessary
  3. Spread nut butter on toasted bread
  4. Top with berries
  5. Enjoy!
